Make Ahead Mixes

Good Afternoon 🙂

As I sit home in quarantine and waiting for my face to heal I decided to replenish some homemade mixes I was out of. I have been replacing a lot of processed mixes with homemade versions. Here are 2 mixes I love…

Pancake Mix

* You need a large container to store this in. I typically double this recipe *

4 cups All Purpose Flour

2 tsp salt

1/4 cup sugar

1 tbsp plus 1 tsp baking powder

Mix this well in container

To make:

1 1/2 cups of pancake mix

1 egg

3 tbsp butter melted

1/2 cup of milk

Mix well, cook in skillet and enjoy😊

 

Muffin Mix

* You need a large container to store this*

6 cups of All Purpose Flour

3 tbsp baking powder 

1 1/2 tsp salt

1/2 cup sugar

Mix well in container

To Make:

2 1/4 cups of muffin mix

2 eggs

1 cup of milk

1/4 cup of butter, softened 

Mix well and add any fruits, vegetables or chocolate chips if you like.

Bake at 400 degrees for 15 minutes

 

These are Chloe’s go to breakfast items. Today I made up some of the muffins with chocolate chips.
