I love baking with my girl. Once Fall is here she starts asking me for Pumpkin Bread or Muffins. I always say “Ok, but you have to help me make them”. Its a great bonding time with her.
I also make this a reading and math activity, as well as life skill learning. I have Chloe read me the recipe and help me find the ingredient on the table. Then I show her the measuring cup or spoon we need. Her favorite part is always cracking the eggs into the bowl. We really enjoy baking and learning together. Here is the recipe we used:
1 3/4 cup all purpose flour
1 cup granulated sugar or Splenda
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1/4 tsp nutmeg
1 (15 oz ) can of pumpkin
1/2 cup of oil (I use olive oil)
1 tsp vanilla extract
**Set oven to 375 degrees. Put muffin liners in tin or spray.
Mix all dry ingredients together. Then add in the eggs can pumpkin, oil, and vanilla. Mix well.
Put into muffin tins. Bake 20 to 25 minutes.
These are so yummy. Chloe eats these for Breakfast for the whole week😀
