I wanted to share an update on my weight loss journey using Keto. It is working very well for me. I have lost 25 pounds and over 8 inches total. I feel better and have more energy.
I do need to expand my meal plan a bit. Right now I keep things super simple. That works well for me, but every now and then I want a more flavored meal. Tonight I am frying zucchini in olive oil. I have always loved fried potatoes, but fried squash and zucchini are good replacements. I also love cauliflower rice in place of brown rice. I buy the flavored type so it’s quite yummy. I am really looking forward to all of the summer veggies!
If I eat any breads or carbs I feel it. I feel sluggish and my tummy really hurts. So not eating heavy carbs has been beneficial for me. Do I miss any foods? I do miss potatoes and occasionally will eat one. I also miss cornbread. I can get out of control with cornbread and butter. Lol.
Chloe is affected heavily by carbs. I have removed the ones she seems addicted too. No cheese its, buttery crackers or cookies. I do keep graham crackers and animal crackers for her. She doesn’t eat them as often.
Exercise is going well. My knee hurts off and on, but I try to push through. Some nights I walk and others I dance to music. I am also doing a 30 day squat, ab and arm challenge. It’s going pretty well too. The squats aggravate my knee, but really do help.
Here is a Salmon Patty recipe I make:
1 can Salmon drained, no bones
1/2 cup Almond Flour
2 TBSP Mayonnaise
1 large egg
1/2 tsp salt
1/4 tsp ground thyme
1/4 tsp black pepper
*Mix all together. Fry in Olive oil 5 to 6 minutes each side until crispy.
